Wholesome banana pancakes drizzled with honey and fresh banana slices - a perfect weekend treat!
Ingredients:
  • 2 large bananas
  • 225.00 gm wholemeal self-raising flour
  • 390.00 gm buttermilk
  • 2 eggs, lightly beaten
  • 28.60 gm honey
  • Olive oil cooking spray
  • Honey, to serve
  • Reduced-fat passionfruit yoghurt, to serve
Instructions:
  • In a bowl, mash 1 banana. In a separate bowl, place the flour and make a well in the center. In a jug, combine buttermilk, eggs, honey, and the mashed banana. Pour the mixture into the well of the flour. Whisk until smooth and let it stand for 10 minutes.
  • Grease a spacious non-stick pan with oil and warm over medium heat. Pour 1/4 cup batter into the pan and cook until bubbles form on the surface (about 2-3 minutes). Flip the pancake and cook until golden and fully cooked (about 1-2 minutes). Transfer to a plate, cover to maintain warmth, and continue the process with the remaining batter to yield 12 delicious pancakes.
  • Slice the remaining banana thinly, then layer it over the pancakes on plates. Drizzle with honey, add a dollop of yogurt, and serve.
