Friday Night Nacho Bake

Transform traditional nachos into a hearty dinner bake by layering tortilla chips with your favorite toppings in a 13 x 9 pan.
Ingredients:
  • 1 lb ground beef sirloin
  • 1 package (8 oz) refrigerated prechopped onion
  • 1 package (8 oz) refrigerated prechopped tricolor bell pepper mix
  • 1 jar (16 oz) thick & chunky mild salsa
  • 3 cups shredded pepper Jack cheese (12 oz)
  • 1 bag (11 oz) tortilla chips
  • 1/2 cup unsalted butter, melted, cooled
  • 2 cups shredded iceberg lettuce
  • 1 cup diced tomatoes
  • 1/4 cup sliced green onions (4 medium)
  • Sour cream, if desired
Instructions:
  • Preheat the oven to 375°F. Cook beef in a large nonstick skillet over medium-high heat for 5 to 7 minutes until fully cooked, stirring occasionally. Add onion and bell peppers and continue cooking for about 5 minutes until tender, stirring occasionally.
  • Combine salsa, olives, and 1 1/2 cups of cheese with the beef mixture. Transfer the mixture into a 13x9-inch (3-quart) glass baking dish without greasing.
  • Crush tortilla chips in a resealable bag until coarse crumbs form. Add melted butter, shake well to mix. Sprinkle over beef mixture and top with remaining 1 1/2 cups of cheese.
  • Place in the oven, uncovered, for 25 to 30 minutes until fully heated. Allow it to sit for 5 minutes. Garnish with lettuce, tomatoes, and green onions. Serve with a dollop of sour cream.
