Fried avocado wedges with wasabi-lime sauce: crispy, creamy, and bursting with zesty flavors.
Ingredients:
  • 1/4 cup mayonnaise
  • 1/2 teaspoon wasabi powder
  • 1/2 teaspoon fresh lime juice
  • 1 1/2 cups vegetable or canola oil (or 2 inches oil in skillet)
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1 egg, beaten
  • 1 cup Progresso™ panko crispy bread crumbs
  • 2 avocados
  • 1/2 teaspoon kosher (coarse) salt
Instructions:
  • Combine mayonnaise, wasabi powder, and lime juice in a 6-oz ramekin or small dish. Chill in the refrigerator until serving.
  • Heat oil in a 10-inch skillet over medium-high heat until it reaches 350°F.
  • Prepare your coating station by setting up three small shallow bowls containing flour, beaten eggs, and bread crumbs. Line a large plate with kitchen towels for draining.
  • First, separate the pit and peel from the avocados and cut each one into 6 wedges. Proceed by dipping each wedge in flour, gently tapping off any excess. Then, dip the flour-coated wedge into beaten egg, followed by coating it with bread crumbs. Repeat this process for all the avocado wedges until they are all breaded.
  • Working in batches, elegantly lay the coated avocado wedges into the sizzling oil. Fry for 30 to 60 seconds per side, or until achieving a delightful golden brown color.
  • Using a slotted spoon, transfer the fried wedges from the skillet to a plate lined with a towel. Season with salt and serve with dipping sauce.
