Simple and delicious fried calamari – a crispy appetizer suitable for any occasion.
Ingredients:
  • 1 pound calamari tubes, thawed if frozen
  • peanut oil for frying
  • 6 cups all-purpose flour, divided
  • 2 cups whole milk
  • 4 large eggs
  • 1 tablespoon cornstarch
  • 1 tablespoon paprika
  • 1 teaspoon finely ground black pepper
  • 0.5 teaspoon cayenne pepper
  • 1 tablespoon fresh parsley, or to taste
  • 1 wedge lemon
Instructions:
  • Inspect the calamari for any damage and cut it into 1/8- to 1/4-inch rings.
  • Preheat oil in a deep-fryer or large saucepan to a temperature of 400 degrees F (200 degrees C).
  • Pour 2 cups of flour into a bowl. In another bowl, mix milk and eggs. In a third bowl, combine the remaining 4 cups of flour with cornstarch, paprika, salt, pepper, and cayenne, and mix well.
  • Coat calamari rings in plain flour, then in egg mixture, and finally in seasoned flour until fully coated. Repeat the process with egg mixture and seasoned flour if needed for extra crispiness.
  • Fry floured calamari in hot oil until golden, about 3 to 4 minutes per batch. Remove with a slotted spoon to let excess oil drip off. Drain on paper towels and transfer to a small bowl to season.
  • Garnish with fresh parsley and a lemon wedge.
