Golden brown crispy catfish chunks seasoned with spicy mustard and thyme - a flavorful snack or appetizer.
Ingredients:
  • 2 pounds catfish fillets, cut into 1 1/2-inch pieces
  • 2 tablespoons dried thyme leaves
  • 1 cup spicy brown mustard
  • 2 cups all-purpose flour
  • 1 teaspoon black pepper
Instructions:
  • In a mixing bowl, combine catfish pieces with thyme leaves, ensuring an even coating. Add mustard and mix thoroughly using your hands. Cover the bowl and refrigerate for 8 hours or overnight.
  • Begin by heating the oil in a deep-fryer or large saucepan to 350 degrees Fahrenheit (175 degrees Celsius).
  • In a large bowl, combine flour, salt, black pepper, and baking soda. Coat catfish pieces in the flour mixture, shaking off any excess.
  • Fry catfish nuggets in batches in hot oil until they are cooked through and golden brown, about 3 to 4 minutes. Place them on a paper towel-lined plate to drain. Allow the oil to return to temperature before frying the next batch.
