Golden fried catfish coated in a spicy cornmeal blend, served with zesty lemon wedges.
Ingredients:
  • 1 cup cornmeal
  • 2 teaspoons ground cayenne pepper
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 0.33333334326744 cup extra virgin olive oil
  • 4 (4 ounce) fillets catfish
  • 1 cup milk
  • 4 cloves garlic, minced
Instructions:
  • Combine cornmeal with spicy cayenne, flavorful paprika, and aromatic onion powder in a mixing bowl. Mix thoroughly before spreading the mixture on a generous sheet of waxed paper.
  • Warm the oil in a sizable skillet over medium heat.
  • In a medium bowl, gently coat catfish filets with milk, allowing excess to drip off. Roll the milk-coated filets in cornmeal mixture until fully coated. Set aside.
  • Sauté garlic in a hot skillet until fragrant, ensuring not to burn. Add the breaded catfish fillets, cooking each side for 5 to 7 minutes, seasoning with salt after flipping. Cook until beautifully golden and fish easily flakes with a fork. Drain on paper towels.
