Succulent pan-fried catfish served on spicy rice for a quick and tasty dinner.
Ingredients:
  • 1 cup white rice
  • 2 cups water
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon hot pepper sauce
  • 1 teaspoon ground thyme
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried dill weed
  • 0.25 teaspoon lemon pepper
  • 2 (8 ounce) fillets catfish
  • 0.5 cup butter, melted
  • 1 teaspoon lemon juice, or to taste
Instructions:
  • In a saucepan, combine rice, water, Cajun seasoning, and hot pepper sauce. Bring to a boil, then lower the heat, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed.
  • Combine thyme, black pepper, cayenne pepper, salt, garlic powder, onion powder, paprika, dill weed, and lemon pepper in a bowl, mixing well. Brush butter on catfish fillets and coat both sides evenly with the seasoning mixture.
  • In a large skillet over medium-high heat, pan-fry the seasoned catfish in any remaining melted butter until easily flaked with a fork, about 4 to 5 minutes per side.
  • Plate seasoned rice, top with catfish, then drizzle with remaining butter from skillet and finish with a sprinkle of fresh lemon juice.
