Elevate deviled eggs: dip in breadcrumbs, fry until crispy, top with creamy filling for a delicious twist on a classic appetizer.
Ingredients:
  • Canola oil, for frying
  • 6 large hard-boiled eggs
  • 3 tablespoons mayonnaise (such as Duke’s)
  • 2 teaspoons finely chopped dill pickle relish
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 teaspoon kosher salt, divided
  • 1/2 cup (about 2 1/8 ounces) all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko (Japanese-style breadcrumbs)
  • 1 ounce Parmesan cheese, grated (about 1/4 cup)
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • Chopped fresh chives and paprika
  • Hot sauce, for serving
Instructions:
  • Prepare all the ingredients.
  • In a large Dutch oven or heavy-bottomed pot, bring 1 1/2 inches of oil to a temperature of 360 degrees F (180 degrees C over medium-high heat.
  • Once the oil is hot, halve the hard-cooked eggs lengthwise, delicately scoop out the yolks, and transfer them to a small bowl. Mash the yolks with mayonnaise, relish, Dijon mustard, black pepper, and 1/2 teaspoon of salt until creamy. Put the mixture in a piping bag or a zip-top plastic bag and reserve for later use.
  • Prepare a dredging station: place flour in one bowl, beaten eggs in another, and mix panko bread crumbs, Parmesan cheese, garlic powder, cayenne, and remaining 1/4 teaspoon salt in a third bowl. Dredge each egg white half in flour, then coat it in beaten eggs, allowing excess to drip off. Finish by coating it in the panko mixture and set aside on a clean plate.
  • Fry the coated egg whites in hot oil in 2 batches until golden brown, about 30 seconds to 1 minute. Adjust heat to keep the oil at least 360 degrees F (180 degrees C). Place on a paper towel-lined plate.
  • Evenly distribute the egg yolk mixture (about 1 tablespoon each) onto the center of the fried eggs. Top with chives and paprika for garnish. Serve these warm eggs with hot sauce for a delicious kick.
