Try Chef John's modern mozzarella puffs with a choux pastry base for a delicious twist on classic mozzarella sticks.
Ingredients:
  • 0.33333334326744 cup water
  • 2 tablespoons unsalted butter
  • 1 teaspoon kosher salt
  • 0.33333334326744 cup all-purpose flour
  • 1 pinch cayenne pepper
  • 1 pinch freshly ground black pepper
  • 1 cup marinara sauce, or to taste
  • 1 teaspoon balsamic vinegar
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 1 anchovy fillet
  • 4 ounces low-moisture mozzarella cheese
  • 4 cups canola oil for frying
Instructions:
  • In a medium saucepan over medium-high heat, bring water, butter, and salt to a simmer. Add flour all at once and reduce heat to medium. Stir with a wooden spoon or spatula until the dough starts to come together. Cook and stir the dough for 2 to 3 minutes.
  • After taking it off the heat, place the dough into a spacious bowl. Allow it to cool until it's not hot but still very warm, for about 5 to 10 minutes. Mix in the egg and flavor with cayenne and freshly ground black pepper. Whisk vigorously until you have a soft, sticky dough. Then, use a spatula to form the dough into a ball.
  • Cover the dough and spatula with plastic wrap and chill in the refrigerator for about 1 hour until cool.
  • In a small pot over medium heat, infuse marinara sauce with balsamic vinegar, oregano, and red pepper flakes. Add anchovy fillet, stir well, bring to a simmer, and let it gently bubble for 10 minutes. Remove from heat, cover, and set aside until needed.
  • Take the dough out of the refrigerator and uncover it. Sprinkle grated mozzarella cheese over the dough and mix well to combine.
  • Warm the oil in a deep fryer or heavy-duty pan until it reaches 350 degrees F (175 degrees C. Keep the oven on at 200 degrees F (93 degrees C) for warming.
  • Using two spoons, shape about 2 tablespoons of dough per puff into a football shape.
  • Fry 5 or 6 puffs at a time in hot oil until golden brown, about 2 to 3 minutes. Drain on paper towels and keep warm in a preheated oven while frying the rest of the dough. Serve with hot marinara sauce.
