Fried pizza (Pizza fritta)

Try making authentic fried pizza for a delicious twist!
Ingredients:
  • 1 basic pizza dough recipe
  • flour for dusting
  • vegetable oil for frying
  • 2 x 150 g buffalo mozzarella balls
  • 5 teaspoons dried oregano optional
  • extra virgin olive oil
  • 1 clove garlic peeled and finely sliced
  • 1 bunch fresh basil leaves picked
  • 400 g good-quality tinned plum tomatoes
  • sea salt
  • freshly ground black pepper
Instructions:
  • Start by preparing your basic pizza dough. Next, prepare the tomato sauce by heating oil in a saucepan and gently cooking sliced garlic until golden. Then, add half of the basil, tomatoes, salt, and pepper. Cook for around 20 minutes, mash the tomatoes until smooth, adjust seasoning, and set aside. Preheat your grill to the highest setting. Divide the dough into 10 pieces, flatten and roll out on a floured surface to about 0.5cm thick. Let rest for 10 minutes. In a hot frying pan, fry each dough for 30 seconds on each side in about 2cm of vegetable oil. Transfer the fried bases to a baking tray. Now, top each base with tomato sauce, mozzarella, basil leaves or dried oregano, and a drizzle of olive oil. Grill until the cheese is melted, and the dough is golden and cooked. Enjoy the lightest and most incredible pizzas, inspired by the original way pizzas were made.
