Fried pizza margherita

Make crispy fried pizza margherita for a delicious snack or easy appetizer.
Ingredients:
  • 1 canned whole peeled tomato
  • 500ml (2 cups) extra virgin olive oil, for frying, plus 3 tbs, extra
  • 250g pizza dough (see notes)
  • 200g fior di latte cheese or buffalo mozzarella, torn
  • 12 fresh basil sprigs
  • 100g (1 cup) finely grated parmesan
Instructions:
  • Roughly puree the tomato using your hands, a fork, or a stick blender in a bowl. Add the extra 3 tablespoons of olive oil, a couple of pinches of salt to taste, and mix until well incorporated. Set aside.
  • Shape the dough into a 3cm-thick sausage on a floured surface, then cut into 12 gnocchi-shaped pieces. Heat 500ml (2 cups) olive oil in a deep saucepan to 175°C. Fry the dough pieces individually until crispy and golden, turning as needed. Drain on a paper towel-lined plate for 15-20 seconds before serving.
  • Place on a platter and garnish each piece with tomato, mozzarella, and a fresh basil sprig. Finish with a sprinkle of grated parmesan and serve promptly.
