Air fryer pizza pockets

Air fried pizza pockets - kid-friendly lunchbox or after school snack.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 1/2 red capsicum, finely chopped
  • 100g mushroom
  • 120g baby spinach
  • 50g lean leg ham, finely chopped
  • 80g fetta, crumbled
  • 62.50 ml fresh basil leaves, torn
  • 1/2 tsp dried oregano
  • 4 Helga’s Traditional White Wraps
  • 91.58 gm tomato paste
  • Olive oil spray
  • Green salad, to serve
Instructions:
  • 1. Heat oil in a pan over medium-high heat. Sauté capsicum until just starting to soften, about 5 minutes. Add mushrooms and cook until golden and any liquid has evaporated, about 5 more minutes. Transfer to a bowl and cool for 10 minutes before using.
  • Place the spinach in a heatproof bowl and cover it with boiling water. Allow it to stand until wilted, about 1 minute. Drain the spinach and set it aside to cool for 10 minutes.
  • Gently press out extra moisture from the spinach, then stir it into the capsicum mixture. Combine with ham, feta, basil, and oregano. Season with salt and pepper, and mix well.
  • Lay a wrap on a flat surface and generously spread 1 tablespoon of tomato paste in the center. Add a portion of the capsicum mixture. Roll up the wrap, ensuring to fold in the sides to create a neat parcel. Repeat with the remaining wraps, tomato paste, and capsicum mixture to make a total of 4 flavorful parcels. Finish by lightly spraying the tops with oil.
  • Preheat the air fryer to 180°C. Cook the parcels, seam-side down, in 2 batches for 6 to 8 minutes until they are golden and crisp. Enjoy with a side of salad (refer to note).
