Kid-friendly veggie fried rice lettuce cups by Stephanie Alexander Kitchen Garden Foundation - a surefire hit!
Ingredients:
  • 2cm-piece ginger, peeled, finely chopped
  • 60ml soy sauce
  • 9.20 gm olive oil
  • 1 small red onion, thinly sliced
  • 800.00 gm cooled cooked brown rice or microwavable brown rice
  • 1 carrot, peeled, cut into long thin matchsticks
  • 8 spring onions, thinly sliced
  • 2 silverbeet leaves, finely chopped
  • 2 tsp sesame oil
  • 30 small whole lettuce leaves
Instructions:
  • In a small bowl, combine the eggs, ginger, and 1 tablespoon of soy sauce, and whisk until well mixed. Heat 1 teaspoon of olive oil in a wok or large non-stick frying pan over high heat. Pour one-third of the egg mixture into the pan and cook for 20 seconds or until nearly cooked. Flip and cook until fully set. Transfer the omelette to a plate. Repeat with the remaining egg mixture in two more batches. Roll up each omelette and thinly slice before serving.
  • - Heat the leftover olive oil in the wok or pan. Cook the onion and rice for 1-2 mins. Incorporate the carrot and spring onion. Mix in the silverbeet and the rest of the soy sauce. Drizzle in sesame oil. Add the egg back, cook until heated through and well mixed. Serve the rice on a platter.
  • Arrange the lettuce leaves on serving plates and stuff them with the delicious rice mixture.
