Crispy golden vegan fried tofu lentil bites served with tangy soy mayo.
Ingredients:
  • 0.5 cup green lentils
  • 7 ounces soft tofu, drained and cut into cubes
  • 1 cup fresh spinach leaves, thinly sliced
  • 1 teaspoon white sugar
  • ground black pepper to taste
  • 0.75 cup all-purpose flour
  • vegetable oil for frying
  • 1 cup sunflower seed oil
  • 0.5 cup unsweetened soy milk
  • 2 teaspoons apple cider vinegar
  • sea salt to taste
Instructions:
  • In a spacious container, submerge the lentils in cool water, ensuring they are covered by several inches; let them soak for 2 hours.
  • Combine lentils, tofu, spinach, sugar, 1/2 teaspoon salt, and pepper in a bowl. Mix well by hand, then gently fold in flour until just combined.
  • In a saucepan over medium heat, warm vegetable oil. Carefully spoon round teaspoonfuls of the tofu mixture into the hot oil. Fry until beautifully golden on each side, for approximately 2 minutes per side. Then, let them rest on a paper towel-lined plate to drain.
  • In a bowl, mix together sunflower seed oil, soy milk, apple cider vinegar, and sea salt. Use an immersion blender to blend until smooth to create mayonnaise. Enjoy with tofu bites.
