Delicious slow cooker pinto beans, perfect for pairing with enchiladas or bringing to a potluck.
Ingredients:
  • 1 onion, chopped
  • 2 fresh tomatoes, diced
  • 1 pound dry pinto beans
  • 5 cloves garlic, chopped
  • 1 teaspoon salt
  • 0.5 pound bacon, diced
  • 1 (3.5 ounce) can sliced jalapeno peppers
  • 1 (12 fluid ounce) can beer
  • 0.33333334326744 cup chopped fresh cilantro
Instructions:
  • In a slow cooker, submerge pinto beans in water. Add garlic and salt. Cook covered on High for 1 hour.
  • Fry the bacon in a skillet over medium-high heat until evenly browned but still tender. Remove half of the bacon fat. Add the onions to the skillet and sauté until tender. Stir in the tomatoes and jalapenos, cook until heated through. Transfer the mixture to the slow cooker and combine with the beans.
  • During the last 30 minutes of cooking on Low, stir in the beer and cilantro. Cover the slow cooker throughout.
