Make flavorful and budget-friendly Mexican beans in a snap with simple ingredients and time.
Ingredients:
  • 1 pound dried pinto beans, washed
  • 1 white onion, chopped
  • 0.5 bunch fresh cilantro, chopped
  • 1 fresh jalapeno pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons lard
  • water to cover
  • salt to taste
Instructions:
  • In a large pot, combine beans, onion, cilantro, jalapeño pepper, garlic, and lard. Fill with enough water to cover the ingredients by 4 to 5 inches. Bring to a boil, then simmer for 2 to 5 hours until beans are tender, adding water as needed.
  • Season the cooked beans with salt to taste once they are soft.
