Authentic and worth the effort refried beans recipe passed down by a friend.
Ingredients:
  • 1 pound dry pinto beans
  • 2 onions, diced
  • 2 teaspoons salt
  • 1.5 teaspoons pepper
  • 0.75 cup butter
  • 1 cup shredded Cheddar cheese
Instructions:
  • Allow the pinto beans to luxuriate in a flavorful bath of 1 quart of water overnight.
  • In a large saucepan, combine beans with enough water to cover them. Stir in onions, garlic, salt, and pepper. Bring to a boil, then let it simmer over medium-low heat until beans are tender, for about 1 to 2 hours. Add more water if needed to avoid burning.
  • Mash the beans using a potato masher, then blend in the butter. Cook until thickened, stirring occasionally to absorb the butter. Season to taste.
  • Preheat the oven to 350°F (175°C). Spread the bean mixture in a 9x13 inch baking dish, then top with shredded cheese. Bake until cheese is melted, about 15 minutes.
