Slow cooker Mexican beans - a healthier twist on refried beans, perfect with any Mexican meal.
Ingredients:
  • 1.5 cups dry pinto beans
  • 0.5 teaspoon white sugar
  • 1 teaspoon minced garlic
  • 2 tablespoons finely chopped onion
  • 2 slices smoked bacon
  • 2 cups water
Instructions:
  • In a slow cooker, combine beans, sugar, garlic, onion, and bacon. Add water, cover, and cook on High for 6 hours. Remove 2/3 of the liquid, discard bacon, then use a potato masher to create a chunky consistency. Season with salt to taste before serving hot.
