Slow-cooked refried beans are fried to perfection after 6 hours.
Ingredients:
  • 5 quarts water, or as needed
  • 1 pound pinto beans, washed
  • 2 cloves garlic, peeled and smashed
  • canola oil
Instructions:
  • In a large pot, gently simmer water, pinto beans, and garlic for 5 1/2 hours, stirring occasionally. Add salt and cook for an additional 30 minutes until beans are very soft, adding more water as needed to keep beans covered.
  • In a hot skillet, with some canola oil, add beans with their liquid. Use a potato masher to mash the beans until they start breaking down, around 3 minutes.
