Whip up irresistible holiday muffins that steal the show. Delicious meets beautiful in this crowd-pleasing centrepiece.
Ingredients:
  • 250g mixed dried fruit
  • 1 orange, zested, juiced
  • 20.00 ml brandy
  • 150g marzipan
  • 3 eggs
  • 175g unsalted butter, softened
  • 175g caster sugar
  • 300g self-raising flour
  • 2.50 gm mixed spice
  • 100ml milk
  • 220g caster sugar
  • 3 eggwhites
Instructions:
  • In a bowl, mix fruit with zest, juice, and brandy. Let sit for 30 minutes.
  • Preheat the oven to 180°C and prepare a muffin pan with foil cases.
  • Divide the marzipan into 12 equal pieces, shape them into balls, and set aside.
  • In a large bowl, combine eggs, butter, sugar, flour, spice, and milk using electric beaters. Gently fold in fruit and soaking liquid. Spoon mixture into muffin holes, add a marzipan ball in each, then top with the remaining mixture. Bake until golden and cooked through, about 25 minutes. Let cool before enjoying.
  • In a saucepan, combine sugar with 1/3 cup (80ml) water over low heat until sugar dissolves. Increase heat and boil for 5 minutes, occasionally brushing down the sides of the pan with a damp pastry brush. Let cool briefly.
  • In the bowl of an electric mixer, beat egg whites until soft peaks form. Gradually add the sugar syrup while the mixer is running on low speed. Once all the syrup is incorporated, beat on high for 10 minutes until the mixture is thick, pale, and fluffy. Spread the frosting on muffins and top with candles for decoration.
