Perfectly balanced sugar cookies with a hint of lemon to enhance the flavor profile.
Ingredients:
  • 0.5 cup butter
  • 1 cup sugar
  • 0.5 cup vegetable oil
  • 1 egg, lightly beaten
  • 2 cups flour
  • 0.5 teaspoon cream of tartar
  • 0.25 teaspoon salt
  • 0.25 cup white sugar, or as needed
  • 0.5 cup powdered sugar
Instructions:
  • Preheat the oven to a perfect 350 degrees F (175 degrees C).
  • Using an electric mixer, cream the butter in a bowl until smooth. Add 1 cup of sugar, vegetable oil, lemon juice, and vanilla extract; mix well. Incorporate the egg thoroughly into the mixture.
  • In a bowl, combine flour, cream of tartar, baking soda, and salt. Then add this mixture to the butter, mix until fully combined.
  • Pour 1/4 cup sugar into a small bowl, form dough into 1-inch balls, coat each ball in sugar, and place on an ungreased baking sheet.
  • Bake in the preheated oven until lightly browned, approximately 10 minutes. Then, cool on a wire rack for about 30 minutes until completely cooled.
  • Combine powdered sugar and lemon juice in a small bowl, stirring until smooth. Drizzle the frosting over the cookies and let it set for a minimum of 5 minutes before enjoying.
