Decadent coffee-chocolate mousse - a delightful post-dinner treat!
Ingredients:
  • 3 eggs, at room temperature, separated
  • 90g caster sugar
  • 65g good-quality dark chocolate, chopped
  • 20.00 ml good-quality instant coffee granules
  • 40.00 gm hot water
  • 150ml thickened cream
  • 2 x 30g Flake bars (Cadbury brand), crumbled
Instructions:
  • Whisk egg yolks and sugar in a large bowl with electric beaters until the mixture becomes thick and pale.
  • In a small saucepan, combine dark chocolate, coffee, and hot water. Stir over low heat for 2-3 minutes until the chocolate is melted and the mixture is smooth. Let it cool for 5 minutes. Then, gently mix the chocolate into the egg mixture until combined evenly.
  • Whip the cream until soft peaks form, then gently fold it into the chocolate mixture using a large metal spoon.
  • Beat egg whites with electric beaters in a large, clean, dry bowl until stiff peaks form. Gently fold the egg whites into the chocolate mixture until just combined.
  • Transfer the mixture into a 1.5-litre (6-cup) airtight container. Freeze for 2-3 hours until solid. Scoop the frozen mousse and top with crumbled Flake before serving.
