Decadent make-ahead mocha dessert with coffee and chocolate.
Ingredients:
  • 1 pint (2 cups) coffee-flavored frozen yogurt
  • 3/4 cup chocolate cookie crumbs
  • 2 tablespoons butter or margarine, melted
  • 1/2 cup caramel topping
  • 2 tablespoons finely chopped pecans
  • 1 1/4 cups Cool Whip fat-free frozen whipped topping, thawed
Instructions:
  • Take the frozen yogurt out of the freezer to soften. Coat an 8-inch square pan with cooking spray. Combine cookie crumbs and sugar in a small bowl. Mix in butter until crumbly and well combined. Press the mixture into the pan and freeze for about 10 minutes until set.
  • Smooth the gently softened yogurt across the crust, ensuring even coverage. Place in the freezer for approximately 1 hour, or until it solidifies.
  • In a small bowl, combine caramel topping with pecans. To serve, add a generous 2 tablespoons of whipped topping on each serving. Drizzle 1 tablespoon of caramel mixture over the top.
