Year-round jam made easy with frozen berries.
Ingredients:
  • 1kg mixed frozen berries
  • 880g (4 cups) caster sugar
  • 4 oranges, juiced
  • 40ml (2 tbsp) Cointreau or Grand Marnier
Instructions:
  • Combine berries, sugar, and orange juice in a large pan over low heat, stirring until sugar dissolves. Increase heat to a slow boil. Skim off any scum that forms on the surface with a slotted spoon. After 30 minutes, test the jam's consistency by spooning it onto a chilled plate and pushing with your finger - ready when it wrinkles and a skin forms. If not ready, return plate to freezer. Cook jam for 10 minutes, test again for set. Repeat until desired consistency is reached. Stir in liqueur, then transfer to sterilized jars.
