Ingredients:
  • 112.50 gm sugar
  • 20.00 gm dairy-free margarine
  • 1 egg
  • 250.00 ml cooked pumpkin, mashed lukewarm
  • 300.00 gm gluten-free self-raising flour (brown rice-free)
Instructions:
  • Preheat the oven to 180C while you gently dust the baking trays with flour.
  • Cream together the butter and sugar until smooth and fluffy.
  • Combine the egg and beat until mixed. Mix in the pumpkin and flour until a dough forms, then shape into loose balls.
  • Bake in the oven until golden brown, about 15 - 20 minutes.
