Exciting and visually appealing fruit dish kids will love.
Ingredients:
  • 1/2 small round seedless watermelon (see note)
  • 1 kiwi fruit, peeled, halved, sliced
  • 1 small banana, peeled, sliced
  • 125.00 ml low-fat gluten-free coconut yoghurt
  • 4 strawberries, hulled, chopped
  • 1/2 x 125g punnet blueberries
  • 62.50 ml fresh mint leaves
  • 20.00 ml gluten-free toasted coconut chips
  • 57.20 gm honey
Instructions:
  • Slice a 2cm thick round from the cut end of the watermelon, saving the rest for later. Divide the watermelon round into 8 equal wedges.
  • Create a stunning pizza-inspired display by arranging wedges on a serving platter. Add kiwi, banana, yoghurt, strawberries, blueberries, mint, and coconut chips on top. Finish by drizzling with sweet honey before serving promptly.
