Create a beautiful DIY cookie mix jar for a thoughtful and quick gift idea.
Ingredients:
  • 450g (3 cups) plain flour
  • 5.00 gm bi-carb soda
  • 0.60 gm sea salt flakes
  • 300g (1 1/2 cups, firmly packed) brown sugar
  • 100g (1/2 cup) caster sugar
  • 190g (1 cup) dark chocolate bits
  • 70g dried blueberries
  • 140g (1 cup) dried cranberries
  • 115g (3/4 cup) pistachio kernels
  • 350g butter, cooled, melted
  • 1 egg, lightly whisked
Instructions:
  • In a bowl, gently combine the flour, bicarbonate of soda, and salt by sifting them together. Add the brown sugar, caster sugar, chocolate bits, blueberries, cranberries, and pistachios, mixing everything together thoroughly.
  • Gently fold in 350g of cooled melted butter followed by 1 lightly whisked egg.
  • Shape tablespoonfuls of the mixture into delightful balls. Arrange them on lined baking trays, ensuring they are 5cm apart. Gently flatten each ball until they are 1.5cm thick.
  • Bake at 180°C, rotating trays halfway through, until golden brown, about 12-14 minutes.
  • Allow the biscuits to cool on the trays for 5 minutes, then move them to a wire rack to cool completely. Recipe yields approximately 60 biscuits.
