Irresistible no-bake treat for tea time.
Ingredients:
  • Melted butter, to grease
  • 1 x 250g pkt Scotch Finger biscuits, broken into large pieces
  • 105g (3/4 cup) dried cranberries
  • 135g (3/4 cup) pitted dates, coarsely chopped
  • 75g (1/2 cup) unsalted pistachio kernels
  • 3 x 200g pkts dark cooking chocolate, coarsely chopped
Instructions:
  • Prepare your 23cm round springform pan by generously greasing it with butter, then lining both the base and sides with non-stick baking paper. In a large bowl, mix together the biscuit crumbs, dried cranberries, dates, and pistachios until well combined.
  • Place the chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon for 3-4 minutes until the chocolate is melted.
  • Drizzle the chocolate over the biscuit mixture, gently folding to combine. Transfer the mixture into the pan, then press firmly with a spoon to pack it down and create a smooth top. Chill in the fridge for 1 hour until firm.
  • Slice the dish before serving.
