Fruit & nut topping for Christmas cake

Festive fruity cake topping elevates any Christmas cake to a whole new level!
Ingredients:
  • 50 g apricot jam
  • 250 g glacé or dried fruits whole or cut into large strips
  • pecans
  • walnuts
  • almonds
  • pine nuts
Instructions:
  • In a small pan, combine apricot jam with a splash of water and simmer over low heat. Remove from heat and let it cool slightly. Brush the top of the cake with the jam using a pastry brush. Arrange the fruit on top, starting with larger pieces and filling gaps with smaller fruits and nuts. Finish by brushing a final coat of apricot glaze for a glossy finish.
