Indulge in mouthwatering gluten-free fruit and nut loaves for a delightful treat.
Ingredients:
  • 200g brown sugar
  • 250g Greek-style yoghurt
  • 3 eggs, separated
  • 36.80 gm vegetable oil
  • 6.00 gm gluten-free baking powder (see note)
  • 1.25 gm bicarbonate of soda
  • 125g almond meal
  • 200g rice flour
  • 140g mixed nuts
  • 50g white sugar cubes
  • 1 eggwhite, whisked until frothy
Instructions:
  • 1. Preheat the oven to 175°C. Grease and line the base and two long sides of an 8-hole mini loaf pan with baking paper. 2. In a bowl, beat together sugar, yogurt, egg yolks, and oil with a wooden spoon until smooth. 3. Stir in baking powder, baking soda, almond meal, rice flour, nut mix, and a pinch of salt.
  • Whisk egg whites until firm peaks form, then gently fold into batter. Fill each hole almost to the top and bake for 18-20 minutes until golden and puffed.
  • Crush cubes in a zip-lock bag using a rolling pin for the topping.
  • Coat the tops with egg white and generously sprinkle with sugar. Bake for 5-6 minutes until the sugar starts to melt slightly, and a skewer inserted in the center comes out clean. Allow to cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
