Fruit bread with chocolate ricotta

Ingredients:
  • 1 75g pkt walnuts
  • 8 1.5cm-thick slices rich fruit bread (Tres Bon brand)
  • 200g fresh ricotta
  • 40.40 gm thin cream
  • 57.20 gm honey
  • 4.40 gm vanilla essence
  • 50g good-quality dark chocolate, chopped
Instructions:
  • Heat up the grill on medium-high heat.
  • Spread the walnuts in a single layer on a baking tray. Toast under the preheated grill, turning occasionally, for 1-2 minutes or until lightly toasted. Transfer to a board and roughly chop.
  • Arrange the bread slices on the tray and grill until both sides are golden brown, about 1-2 minutes. Let them cool slightly for 2 minutes before serving.
  • In a medium bowl, combine ricotta, cream, 1 tablespoon of honey, and vanilla essence. Use an electric beater until smooth. Fold in the chocolate. Spread the ricotta mixture over the toasted fruit bread, place on serving plates, and top with toasted walnuts. Enjoy!
  • Gently warm the remaining honey in a saucepan on low for about 30 seconds until slightly thin and runny. Drizzle the fruit bread with the honey and serve right away.
