Ingredients:
  • 150g dried apricots
  • 150g dried figs
  • 150g pitted dates
  • 150g raisins
  • 525.00 gm orange juice
  • 2.50 gm bicarbonate of soda
  • 135.00 gm brown sugar
  • 2 eggs, lightly beaten
  • 300.00 gm Self-Raising Flour
  • 3.75 gm ground cinnamon
  • 2.50 gm ground ginger
  • butter, to serve
Instructions:
  • Preheat your oven to 180°C and generously grease and line a 7cm deep, 10cm x 21cm loaf pan with baking paper.
  • In a saucepan, gently simmer dried fruit and juice until the liquid is absorbed, stirring occasionally for about 20 minutes. Mix in bicarbonate of soda and let sit for 10 minutes.
  • Pour the fruit mixture into a bowl. Add sugar and eggs, then gently mix. Sprinkle flour and spices over the fruit mixture and stir gently to combine. Transfer the mixture into a loaf pan. Bake for 50 to 55 minutes or until a skewer inserted into the center comes out clean.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack. Serve slices at room temperature or toasted with a generous spread of butter.
