Homemade fruit loaf

Fruit-packed homemade loaf bursting with flavor.
Ingredients:
  • 7g (1 sachet) instant yeast
  • 300mls milk, warmed
  • 45g (1/4 cup, lightly packed) brown sugar
  • 450g (3 cups) plain flour
  • 5.00 gm mixed spice
  • 170g (1 cup) raisins
  • 50g (1/4 cup) mixed peel
  • Henry Jones ® & Co Fruit and Chia Spread, Blood Orange & Chia Seeds, to serve
  • Butter, to serve
Instructions:
  • Whisk yeast, 60ml (1/4 cup) milk, and 2 tsp sugar in a bowl using a fork until frothy. Cover with plastic wrap and let sit for 10 minutes.
  • Combine flour, mixed spice, remaining sugar, and a pinch of salt in a large bowl. Create a well in the center, then pour in the yeast mixture and remaining milk. Use a wooden spoon to mix until a dough forms.
  • Place dough on a clean surface and knead for 8 minutes until smooth. Then, transfer the dough to a lightly greased bowl, cover it, and let it sit in a warm spot for about 1 hour or until it doubles in size.
  • On a work surface, spread out the dough and sprinkle over the raisins and mixed peel. Mix until well combined. Shape the dough into a log and place it in a greased 10 x 20cm loaf pan. Cover and let it rise for about 45 minutes until doubled in size.
  • Preheat oven to 220C/200C fan forced. Bake loaf for 10 minutes, then reduce heat to 160C/180C fan forced and bake for another 15 minutes or until bread sounds hollow when tapped. Let it cool slightly, then turn out onto a wire rack. Brush the top with 2 tablespoons of jam and let it cool.
  • Enjoy slices of freshly toasted bread, generously topped with creamy butter and sweet jam.
