Indulge in the irresistible aroma of freshly baked Christmas fruit mince muffins at breakfast.
Ingredients:
  • 300g plain flour
  • 75g brown sugar
  • 6.00 gm baking powder
  • 2.50 gm bicarbonate soda
  • 2.50 gm ground cinnamon
  • 62.50 ml chopped pecans or walnuts
  • 250g fruit mince
  • 300ml buttermilk
  • 75ml milk
  • 73.60 gm vegetable oil
  • 1 egg
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 180°C and prepare the muffin pans by greasing or lining them.
  • Combine sifted flour, sugar, baking powder, bicarbonate soda, and 1/2 teaspoon of salt in a bowl. Stir in cinnamon, pecans, and fruit mince until well mixed.
  • Combine buttermilk, milk, oil, and egg in a separate jug. Gently mix into the dry ingredients until just combined.
  • Pour the prepared mixture into the greased muffin pans and bake in the oven for 20-25 minutes until cooked. Allow to cool briefly, then sprinkle with icing sugar before serving.
