Surprise your loved ones on Christmas morning with freshly baked muffins.
Ingredients:
  • 300g plain flour
  • 6.00 gm baking powder
  • 3.75 gm ground cinnamon
  • 75g muscovado* or brown sugar
  • 250g fruit mince
  • 300ml buttermilk
  • 80ml (1/3 cup) vegetable oil
  • 150.00 gm icing sugar, sifted
  • 1-42.00 gm lemon juice
Instructions:
  • Preheat the oven to 180°C and line a mini muffin pan with about 30 small paper muffin cases.
  • Combine the flour, baking powder, cinnamon, and a pinch of salt in a bowl. Mix in the muscovado sugar.
  • Whisk buttermilk, oil, and egg until well mixed, then fold into dry ingredients along with the fruit mix until just combined.
  • Spoon the batter into each muffin case and bake for 20 minutes (you may need to do this in batches). Allow to cool.
  • In a bowl, combine icing sugar with just the right amount of zesty lemon juice until you achieve a smooth, soft icing. Drizzle the delectable icing over the muffins.
