Elevate summer fruit with a fun twist, perfect for kids' parties or family gatherings. Customize with any chopped fruit of your choice.
Ingredients:
  • 4 x 85g packet lemon jelly crystals
  • 750ml (3 cups) boiling water
  • 1/2 (about 4kg) watermelon
  • 2000.00 ml chopped mixed fresh fruit
Instructions:
  • In a large heatproof jug, combine jelly crystals with boiling water and stir until dissolved. Mix in 400ml cold water. Let it cool for 30 minutes, then refrigerate for 1 hour until the jelly thickens to a custard-like consistency.
  • Scoop out the watermelon flesh to make a shell and cut some of it into 1.5cm-2cm cubes (about 2 cups). Save the rest for later use. Combine the cubed watermelon with mixed fresh fruit in a bowl. Place the watermelon shell cut-side up in a large bowl for stability.
  • Pour the jelly mixture into the shell, covering the base. Layer the chopped mixed fruit, alternating with jelly, until the watermelon is full. Chill in the fridge for 4 hours until set.
  • Take out the watermelon from the bowl. Cut the watermelon in half lengthwise and then into wedges. Serve promptly.
