Create a fun watermelon whale fruit centerpiece for a whimsical kids' birthday party!
Ingredients:
  • 4 x 85g packets berry blue jelly crystals
  • 1 litre boiling water
  • 9kg large whole watermelon (see notes)
  • 250g strawberries, hulled, halved
  • 125g blueberries
Instructions:
  • In a heatproof bowl, combine jelly crystals with boiling water, whisking until dissolved. Mix in 800ml of cold water, cover, and refrigerate for 4 hours until set.
  • Position the watermelon on a spacious cutting board. Take a large, sharp knife and cut 10cm diagonally from one end of the watermelon allowing it to stand on its own. Carve out a 10cm triangle from the slice to create a fin. Then, place the watermelon, cut-side down, on the cutting board.
  • Follow the picture to cut a large wedge for the mouth (set aside for later). Peel the skin from the edges to create a 2.5cm strip of white. With a large metal spoon, scoop out the watermelon, aiming for big chunks. Cut the watermelon flesh into 2cm pieces, leaving the mouth roof intact.
  • Place the watermelon whale on a large tray, reserving 2 blueberries. Combine 5 cups of watermelon pieces with strawberries and the rest of the blueberries in a bowl. Spoon the berry and watermelon mixture into the watermelon whale.
  • Follow the picture guide to gently use a melon baller to create eyes, being mindful not to cut through. Use a small sharp knife to scrape a 5mm ring around each eye. Secure blueberries inside each eye with toothpicks. Attach the fin to the watermelon whale using a skewer. Pour jelly around the whale in the tray. Serve and enjoy.
