Indulge in a different fruity coffee cake every morning for a delightful start to your day. Choose from apricot, apple, or blueberry for a variety of delicious options!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 can (21 oz) apricot pie filling
  • 1/2 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pan). Grease and lightly flour or spray a 15x10x1-inch pan. In a large bowl, mix cake mix, oil, water, vanilla, and eggs with a large spoon until batter forms.
  • Reserve 3/4 cup of batter. Spread the rest evenly in the pan. Add pie filling on top. Drop the reserved batter in 1 tablespoon portions over the pie filling, spreading slightly.
  • Bake the cake for 32 to 36 minutes until a toothpick inserted near the center comes out clean. Next, microwave the frosting in a bowl on High for 20 to 30 seconds until melted, then stir. Drizzle the warm frosting over the coffee cake. Allow it to cool for 30 minutes before serving warm or cool, and store it loosely covered.
