Quick and tasty glazed fruit swirl coffee cake, perfect served warm or cold for any occasion. Ready in just 45 minutes!
Ingredients:
  • 4 eggs
  • 3/4 cup milk
  • 1/2 cup butter, melted
  • 2 teaspoons vanilla
  • 1 box Bisquick™ Gluten Free mix (3 cups)
  • 2/3 cup granulated sugar
  • 1 can (21 oz) fruit pie filling (any flavor)
  • 1 cup powdered sugar
  • 2 tablespoons milk
Instructions:
  • Preheat oven to 375°F and generously grease a 15x10x1-inch pan or two 9-inch square pans with shortening or cooking spray.
  • In a big bowl, mix together all coffee cake ingredients (excluding pie filling) until well combined; beat vigorously for 30 seconds. Spread 2/3 of the batter (approximately 2 1/2 cups) in a 15x10-inch pan or distribute 1/3 of the batter (around 1 1/4 cups) in each square pan.
  • Spread the luscious pie filling over the batter, letting some of the batter peek through. Dollop the remaining batter by the spoonful on top of the pie filling.
  • Bake for 20 to 25 minutes until golden brown. Mix glaze ingredients in a small bowl until smooth. Drizzle over warm coffee cake and serve warm or cool.
