Gluten-free fruit mince tarts

Delicious gluten-free mince tarts, perfect for the holidays.
Ingredients:
  • Pure icing sugar, to dust
  • 131.25 gm orange juice
  • 62.50 ml silvered almonds
  • 250g gluten-free plain flour
  • 75.00 gm pure icing sugar
  • 1 tsp xanthan gum
  • 160g butter, chopped, chilled
  • 1 egg white
  • 500.00 ml mixed dried fruit
  • 1 green apple, peeled, grated
  • 45.00 gm brown sugar
  • 50g butter, melted
  • 53.60 gm golden syrup
  • 1.25 gm ground cinnamon
  • 20.00 ml orange zest
Instructions:
  • Combine flour, icing sugar, and xanthan gum in a food processor. Add chopped butter and pulse briefly until mixture resembles breadcrumbs.
  • Combine the egg white in a food processor until mixed. Transfer the mixture to a floured board, lightly flatten it, and wrap it in plastic. Chill in the freezer for 30 minutes. Remove a quarter of the dough, rewrap it, and return it to the freezer.
  • 1. Preheat the oven to 160C (140C fan) and prepare a 12-hole muffin pan by greasing it. 2. Roll out the pastry between two sheets of baking paper until it's 5mm thick. 3. Use a round cutter to cut out 12 rounds measuring 9½cm each. 4. Gently place the pastry rounds into the greased muffin tin. 5. Use a fork to prick each pastry round a few times. 6. Bake in the preheated oven for 10-12 minutes until the pastries are golden-brown.
  • To make the Fruit Mince: Simply cook the fruit mince ingredients in a saucepan until thickened, then let it cool down. Fill the pastries with the fruit mince, sprinkle some grated frozen pastry on top, and bake until golden and crisp. Finish off by dusting with icing sugar before serving.
