Tropical Hawaiian ice cream with pineapple, dragon fruit, and a decadent caramel swirl in 5 simple steps.
Ingredients:
  • 2 (20 ounce) cans crushed pineapple in heavy syrup
  • 2 cups heavy whipping cream
  • 0.5 cup brown sugar
  • 1 (7 ounce) can fully cooked luncheon meat (such as SPAM®), diced
  • 1 dragon fruit, peeled and cubed
Instructions:
  • Strain pineapple in a fine-mesh colander, saving 1 cup of the syrup in the refrigerator for later use.
  • Combine pineapple, heavy whipping cream, and 1/2 cup of brown sugar in a blender or food processor. Blend until smooth for about 20 seconds. Chill in an airtight container in the refrigerator for 2 hours.
  • In a large skillet over medium-high heat, sear cubed luncheon meat for 10 minutes, flipping every 2 minutes to achieve even browning. Stir in reserved pineapple syrup and 2 tablespoons of brown sugar, then simmer until thick and bubbly, approximately 5 minutes. Cool before serving.
  • Once the meat caramel has cooled, transfer the cold pineapple mixture into an ice cream maker and freeze as per the manufacturer's instructions for approximately 20 minutes. Remember to incorporate the dragon fruit during the final 5 minutes of churning.
  • Transfer the luscious ice cream into a sealed, freezer-friendly container. Gently swirl in the decadent meat caramel. Allow it to freeze until solid, approximately 4 hours.
