Hawaii-inspired almond-flavored cookies with a nostalgic red dot center, reminiscent of dim sum days.
Ingredients:
  • red food coloring
  • 1 cup vegetable shortening, plus
  • 3 tablespoons vegetable shortening
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon almond extract
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and place a few drops of red food coloring in a small bowl, setting it aside for later.
  • Use an electric mixer to cream the shortening and sugar in a bowl until smooth. Incorporate the egg and almond extract.
  • Combine the flour, baking soda, and salt in a separate bowl. Add this flour mixture to the sugar-shortening mixture and stir until well combined. Take a small amount of dough, shape it into a walnut-sized ball, and place it on an ungreased cookie sheet. Lightly press the top of the ball with your thumb to create a flat surface. Using a bamboo chopstick dipped in red food coloring, make a red dot in the center of each cookie.
  • Bake in the preheated oven for 15-18 minutes until golden brown, then let cool on a rack.
