Irresistible almond cookies that will convert any almond skeptic into a lover.
Ingredients:
  • 1 cup butter
  • 0.75 cup white sugar
  • 1 egg
  • 0.5 cup almond paste
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 2.5 ounces sliced almonds
Instructions:
  • Heat your oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, whip butter until creamy. Gradually incorporate sugar until mixture is light and fluffy. Add egg yolk (set aside egg white), almond paste, and flavoring, mixing until well combined. Gently fold in flour.
  • Spread the mixture evenly in a 13 x 9 x 2 inch baking pan. Whip room temperature egg white until foamy then brush it over the dough, and sprinkle with almonds. Bake for 35 minutes until lightly browned. Allow to cool completely, then cut into 2-inch squares and store in airtight containers.
