Coconut and almond rice cereal squares - a delicious snack mix favorite!
Ingredients:
  • 1 (14 ounce) package sweetened shredded coconut
  • 2 (6 ounce) packages slivered almonds
  • 1 (14 ounce) box crispy rice cereal squares (such as Rice Chex®)
  • 1 (12 ounce) box honey graham cereal (such as Golden Grahams®)
  • 2 cups white sugar
  • 2 cups corn syrup
  • 1.5 cups butter
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Arrange coconut evenly on one baking sheet and lay out almonds on another baking sheet.
  • Place the coconut and almonds in the preheated oven and bake for 15 minutes. After that, stir the mixture and bake for an additional 5 to 10 minutes, stirring every 4 to 5 minutes, until they turn golden brown.
  • In a large bowl, mix together coconut, almonds, rice cereal squares, and honey graham cereal.
  • In a saucepan, combine white sugar, corn syrup, and butter, and bring it to a boil. Cook until it reaches 240 degrees F (115 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when placed on a flat surface, approximately 10 minutes.
  • Coat cereal evenly with the sugar mixture, then spread it out onto 2 baking sheets to cool, stirring every now and then to keep it from sticking together.
