Shrimp dipped in beer batter and coated in sweet coconut flakes for a tasty appetizer or meal.
Ingredients:
  • 1 cup all-purpose flour
  • 0.66666668653488 cup beer
  • 1 large egg
  • 0.5 teaspoon salt
  • 2 cups sweetened flaked coconut
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 cup vegetable oil for frying
Instructions:
  • Use an electric mixer on low to blend flour, beer, egg, and salt until the batter is smooth. Spread coconut flakes in a shallow dish.
  • Coat shrimp in beer batter, then coconut, ensuring an even layer. Arrange coated shrimp in a single layer on a plate without stacking.
  • Heat vegetable oil in a skillet over medium-high heat until shimmering, about 3-4 minutes. Fry one-third of the shrimp until golden brown, for about 2-3 minutes. Drain cooked shrimp on a wire rack over paper towels. Repeat with remaining shrimp.
