Indulge in a warm slice of fruity tea bread, perfect for snacking on the go.
Ingredients:
  • 350g mixed dried fruit
  • 500ml tea
  • 125g caster sugar
  • 125g butter
  • 225g self-raising flour
  • 2.50 gm mixed spice
Instructions:
  • Combine the mixed dried fruit and cold tea in a bowl, cover, and allow to soak overnight.
  • Preheat your oven to 170°C and generously grease a 25 x 10cm loaf pan.
  • After draining the dried fruit, discard the soaking liquid and transfer them to a saucepan along with sugar, butter, and 150ml of water. Bring the mixture to a boil, then simmer over low heat for 20 minutes. Let it cool, then add flour, mixed spice, and egg. Stir thoroughly to combine.
  • Transfer the mixture into the prepared loaf pan. Bake for 90 minutes, or until a skewer inserted into the cake comes out clean. If the top is browning too quickly, cover with baking paper or foil. Allow to cool for 20 minutes before turning onto a wire rack to cool completely. Serve sliced with butter.
