Exciting fruit dessert with a twist - delicious and enjoyable to create and indulge in.
Ingredients:
  • 1 250g pkt soy cream cheese
  • 55g (1/4 cup, firmly packed) brown sugar
  • 20.20 gm coconut milk (Asia at Home brand)
  • 1/2 tsp finely grated lemon rind
  • 1/2 plain sponge cake, roughly chopped (unfilled, single, 18cm diameter)
  • 24 round rice paper sheets
  • 2 (100g each) carambola (starfruit), ends trimmed, cut lengthways into 1cm-thick, 7cm-long strips
  • 2 (200g each) bananas, peeled, cut lengthways into 1cm-thick, 7cm-long strips
  • 1 445g can jackfruit in syrup, rinsed, drained, patted dry with paper towel, cut lengthways into 1cm-thick strips
  • 60ml (1/4 cup) coconut milk (Asia at Home brand)
  • 60ml (1/4 cup) passionfruit pulp
  • 32.00 gm brown sugar
  • 42.00 gm fresh lemon juice
Instructions:
  • For the coconut passionfruit sauce, combine coconut milk, passionfruit pulp, brown sugar, and lemon juice in a small bowl. Whisk with a fork until well combined and the sugar is dissolved. Cover and let it sit.
  • Whisk soy cream cheese, brown sugar, coconut milk, and lemon rind together using a balloon whisk until the mixture is smooth and the sugar has dissolved. Set aside.
  • Pulse sponge cake in a food processor until you get 90g (1 1/2 cups) of crumbs.
  • Soak a rice paper sheet in warm water for 30 seconds to soften. Pat dry with a paper towel and place on a clean work surface. Sprinkle 1 tablespoon of cake crumbs evenly over the rice paper, leaving a 5cm border. Spoon 1 teaspoon of cream mixture in the center and spread it into a 7cm-long strip using the back of a spoon. Arrange 1 piece of carambola, 1 piece of banana, and 3 pieces of jackfruit on top. Fold in the sides and roll up to seal the filling. Place on a plate and cover with a damp paper towel. Repeat the process with the remaining rice paper, cake crumbs, cream mixture, and fruit.
