A delicious twist on a classic dish, featuring irresistible fry bread. A family favorite that always leaves them asking for more.
Ingredients:
  • 1 (15.5 ounce) can pinto beans, with liquid
  • 0.5 cup picante sauce, divided
  • 1 pound ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 2 cups all-purpose flour, or more as needed
  • oil for frying
  • 2 cups shredded iceberg lettuce
  • 1 cup shredded Cheddar cheese
Instructions:
  • In a small saucepan over low heat, gently mix together beans and 2 tablespoons of zesty picante sauce. Heat for approximately 5 minutes or until warmed through.
  • Brown ground beef with taco seasoning in a large skillet over medium-high heat for 5 to 8 minutes. Cover and keep warm as you make the fry bread.
  • Combine the flour, baking powder, and salt in a bowl. Mix in the milk until a dough forms. Adjust the consistency with additional flour if needed.
  • 1. Knead the dough on a floured surface until smooth for at least 5 minutes. Allow the dough to rest for 5 minutes. Divide into 3/4 cup sized pieces and shape into 1/4 inch thick discs with a slight depression in the center.
  • Heat a generous amount of oil in a large, deep heavy skillet until it reaches 365 degrees F (180 degrees C). Fry the dough in the hot oil until perfectly golden on both sides, roughly 3 minutes per side. Remove and drain on paper towels.
  • Lay out fried bread, then layer with beans, seasoned ground beef, fresh lettuce, and sharp Cheddar cheese. Finish by generously spooning zesty picante sauce over the top.
