Indulge your loved ones with delectable peanut butter chocolate chip sandwich cookies - a delightful treat.
Ingredients:
  • 1/2 cup creamy peanut butter
  • 1/2 cup shortening
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup semisweet chocolate chips
  • 1/4 cup creamy peanut butter
Instructions:
  • Preheat the oven to 375°F (or 350°F for a dark or nonstick cookie sheet). In a large bowl, use an electric mixer on medium speed to beat together 1/2 cup of peanut butter, shortening, granulated sugar, and brown sugar until fluffy. Mix in the egg until smooth, then add the flour, baking powder, and baking soda.
  • Form the dough into 48 one-inch balls. Arrange the balls on an ungreased cookie sheet with 1-inch space between them. Flatten the balls to a 1/4-inch thickness by pressing with a fork in a crisscross pattern.
  • Bake for 4 to 8 minutes until the bottoms are golden brown. Transfer from the cookie sheet to a wire rack. Allow to cool completely, approximately 30 minutes.
  • Microwave chocolate chips in a small microwave-safe bowl on High for about 1 minute until softened. Stir until smooth. Add 1/4 cup peanut butter and mix until smooth. Allow mixture to cool to room temperature or until thickened.
  • Assemble cookie pairs, sandwiching the bottoms together with a generous 1 teaspoon of chocolate mixture. Allow them to sit for about 1 hour until the chocolate sets.
