Decadent chocolate-filled fudge cookies with irresistible peanut butter and chocolate flavors. Perfect for dessert, bake sales, or gifting.
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup creamy peanut butter
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup milk chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 0.75 cup pecan halves
Instructions:
  • Preheat your oven to 325°F (165°C) for the perfect cooking temperature.
  • Whisk the flour, baking soda, and salt until well combined.
  • Combine creamy butter, luscious peanut butter, and a blend of white and brown sugars until smooth. Add in one egg and 1/2 teaspoon of aromatic vanilla extract. Gently fold in the flour mixture. Form the dough into 48 perfectly sized 1-inch balls and arrange each in a mini muffin tin for baking.
  • Create a velvety filling by melting chocolate chips in a double boiler over gently simmering water. Stir in milk and vanilla until fully combined.
  • Bake in the preheated oven until lightly browned, about 14 to 16 minutes. Then, immediately use a melon baller to make wells in the center of each. Let cool in the pan for 5 minutes before carefully transferring to wire racks. Fill each shell with the chocolate mixture using a measuring cup and top with a pecan half.
